1 large head of broccoli (about 1 pound)
½ cup of veganaise
2 tsp. of maple syrup
4 tsp of apple cider vinegar
¼ tsp of sea salt
1/8 tsp of ground black pepper
¼ cup of raisins
½ cucumber diced in small cubes
2 small tomatoes diced into small cubes
Chop the broccoli including the stems into small bite size.
Toss together with the cucumber, tomato and raisins.
Whisk together the veganaise, maple syrup, apple cider vinegar, salt and pepper
Fold together with broccoli mixture and let sit for 30 minutes.
( for variation add 1 tbs. of prepared horseradish to the veganaise)
